Horn and Heel Tried & True Kitchen Knife

$350.00

Horn & Heel, Nashville TN

This knife was made for anyone passionate about making good food. From head chef to home cook, it’s a workhorse.

The design is a hybrid of eastern and western styles, boasting the best of both worlds in ergonomics and performance. The faceted handle delivers unique and articulate control for a traditional pinch grip. While the handle's sloped back, paired with a curved finger catch, supports a more comfortable and relaxed grip. The flat heel lends itself to push cutting when needed, while the upswept tip enables for any rocking, chopping or mincing. More simply — however you grip and rip, this chefy will stay true to your style.

52100 High Carbon Steel Blade

This Tried & True high carbon steel is the tough stuff. The ideal balance of durability and edge retention, these blades are heat treated to 61 Rockwell.

Blade Care

High carbon steel is a professional grade material. It requires hand washing and most importantly, immediate towel drying to prevent corrosion—a small price to pay for a sharper edge.

Blade Geometry

The geometry of the cutting edge has been designed to work with both rock/chop and push cutting preferences. A straight belly and firm heel for push cutting and an upward curve towards the tip is ideal for rocking. The blade also sports a distal taper, where the thickness of the blade is ground gradually to a fine point all the way from the handle to the tip and from the spine to the cutting edge. This attribute produces less drag on a thinner blade.

Stonewash Forced Patina

The beautiful, blackened texture is created by rock tumbling the blade while adding a forced patina. This protects the high carbon steel from corrosion. It’s a start to your natural patina that will develop over time. It does not mean the knife won’t rust or corrode if left wet. Don’t leave the knife in the sink. That is dumb. Don’t be dumb.

Richlite™ Handle & Saya

Typically used for countertops as opposed to granite or quartz, Richlite™ serves as an insanely durable, sustainable, and water resistant handle material.

The saya is made of the same Richlite™ material and held in place by a brass pin. For the same reasons, it serves as an ultra protective cover if you are on the go. (Or, if you are a savage “knife drawer” person.)

Our Signet Brass Bolster

While protecting the handle from liquids and food, the brass bolster also acts as the pivotal point of comfort and balance for any knife grip.
